gluten free crepes
2 eggs
I had my camera in the kitchen this week, thus the new recipes being posted. Recipes are rather boring without a picture.
2 T water
1 tsp vanilla
1 T sugar
1/4 cup rice flour
1/4 cup tapioca flour
Beat eggs, water, vanilla, and sugar. Mix in the rice and tapioca flour, stir until lumps are gone. Heat frying pan over medium/low heat and melt a tsp butter in bottom of pan. Take about 1/4 cup of mix and pour into hot pan. While holding pan by the handle tilt pan in a circular motion until the bottom of the pan is evenly coated. Let cook about 2 minutes or until lightly brown, then flip crepe over and cook for another minute on other side. Makes about 4 crepes.

Gluten free waffles
Gluten free waffles
1 3/4 cup rice flour
1/2 cup tapioca flour
3 t. baking powder
1/2 t. guar gum
1/2 t. salt
1 t. cinnomon
2T sugar
2 large eggs beaten
2 cups almond milk (or milk of choice)
1/4 cup oil
Mix together the dry ingredients. In seperate bowl beat the eggs and add milk and oil. Add the wet ingredients to the dry and stir until blended, do not over stir. Scoop batter onto hot waffle iron. Should make about 7 waffles.
