Curry chicken

Recipe for gluten free curry chicken.

4 chicken breasts
2 T oil
1 can coconut milk
4 T cornstarch
2 T curry powder
1 T onion powder
1 T salt
2 1/4 c water

Cut chicken breasts into pieces and place in pot with oil. Cook on medium heat until cooked through. Pour the can of coconut milk in with the chicken.





In a bowl mix together the corn starch, curry powder, onion powder, and salt. Slowly stir in 1/4 cup of water. You should now have a thick paste.



Slowly pour in another 1 cup of water into the paste, while mixing. Add the mixture to the chicken and 1 more cup of water. Simmer on medium heat until the liquid thickens. We typically serve our curry over rice or noodles. We like to put raisins, nuts or coconut flakes on top.


All our children love this curry chicken, it is one of the only meals I make that nobody protests. Kayla eats curry with a towel head covering so that her hair stays clean. She was saying 'yum, yum' in between bites.

Gluten free recipes

This past year I have put my self and one of my daughters on a gluten and milk free diet due to chronic stomach issues. I have experimented and converted many of my favorite recipes to now being gluten free. My desire was to make meals out of the ingredients that were already in the kitchen. I am going to start posting one or two recipes a week. I hope this is helpful to someone, I personally have enjoyed finding blogs that post new recipes I can try.

This is a fast and easy apple pie recipe that my family loves.

Swedish Apple Pie

4 apples peeled and sliced
2 T honey
1 T cinnamon
1/2 t allspice
3/4 c butter - I use Smart Balance which is gluten free although it does have a small amount of milk
1 c honey
1 egg
1 t vanilla
1/2 t salt
1 1/2 c rice flour
1/2 c walnuts

Toss apples, 2 T honey, cinnamon, and allspice in pie pan, set aside. In separate bowl melt butter, then add honey, vanilla, and egg. Mix thoroughly. Now stir in the rice flour and salt until well blended. Stir in walnuts. Pour the rice flour mixture over the apples.
Let bake in 350 oven for approx. 35 minutes. Use I toothpick to make sure the center is cooked before removing. It is best served warm with a scoop of vanilla milk free ice cream.
